Cauliflower Sandwich Filling

What you need: 

1 head cauliflower
1 teaspoon Dijon mustard
2 tablespoon (to taste) soy vegan mayonnaise
1 teaspoon lemon juice
salt and pepper
1 sliced tomato
slices of whole wheat bread or pita
sliced red onion (for garnish) (optional)

What you do: 

1. Wash and chop the cauliflower into small pieces. Steam in vegetable steamer or microwave until tender (about 5-8 minutes for small chunks).
2. Drain cauliflower well. Place in bowl and mash with potato masher until crumbly.
3. Add remaining ingredients and mix well. Season to taste.
4. Spread filling onto whole wheat vegan bread or stuff into pita. Garnish with tomato slices (or any other vegetable you like on sandwiches).
5. Enjoy!!

i loved this. i added soy sauce and this other type of mustard i have (cant remember the name now) plus a tad bit of raw sugar cuz i love sweet and sour!!!

This was also good on top of a salad--I put it on top of a bed of romaine and sliced a plum tomato to put on top. The cauliflower was so flavorful that I didn't need any extra dressing--just added a little S&P on top of the whole thing. (I hadn't added S&P to the filling.)

This was great! Cauliflower is not usually my first choice of veggie--this was a great way to use it. I used yellow mustard (since that was what I had), onion powder (since I was lazy), and capers. I added some rice vinegar along with the lemon since I thought the recipe called for that--I was wrong, but it was still good.  I wish I had pickle relish. that would be SO good with it.

I put it in the microwave rather than steaming (again, lazy) and had trouble mashing it. I think next time I'll put it in a processors after steaming and before adding the other ingredients to get it to a different consistency.

wow i just made this and its chilling in the fridge, but so far, i really love it! the only things i did differently were adding plain mustard instead of dijon, added capers (and caper juice), diced dill pickle, celery, and onion, and dry dillweed. its perfect for pita bread and crackers!

YUMMMMMMMMMMMMMMMY!! Wow this was awesome. What more can you ask for than a tasty, low-calorie, inexpensive, easy to put together meal. This rocked. I made it with spicy brown mustard (since I didn't have dijon), and used Vegenaise for the soy mayo. I also added some relish, which I LOVED and highly recommend! This was soooo goood. I can't wait to have my sandwich for lunch tomorrow!

fabulous! with pickles and onion.. yum! i should try this for filling in sandwich toaster as suggested.
