Healthy Applesauce Craisin Muffins

What you need: 

1/2 cup non-dairy milk (I used rice)
1 cup applesauce (I recommend sugar-free)
3 tablespoon olive oil (I used a bit less)
1/3 cup maple syrup
1 tablespoon ground flax
2 cups spelt flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon cinnamon
3/4 cup craisins

What you do: 

Preheat 375 to degrees F.
Mix wet. Mix dry. Mix wet and dry. Pour batter into muffins cups, about 3/4 of the cup. Spray the tray if you are not using muffin cups (which seem wasteful to me)
Bake 20 minutes. Lick the bowl while you wait.

I made these with craisins with orange essence and they were really nice. A good muffin recipe for sure!
