Carob Oatmeal Balls

What you need: 

1/2 cup agave nectar
1/2 cup peanut butter
2/3 cup carob powder
1/2 cup nondairy milk
1 tablespoon vanilla
1-1/2 cups quick-cooking rolled oats
3/4 cup coconut + extra for coating
1/2 cup flaxseed
powdered sugar, to taste

What you do: 

1. In a saucepan, heat agave nectar and peanut butter until liquid consistency and without bumps.
2. Add carob, nondairy milk, and vanilla.
3. Remove from heat and add coconut, oats, and flaxseed.
4. Roll in little balls and cover with coconut and powdered sugar.
5. Chill in refrigerator.
