Cajun Black Beans and Sweet Potatoes

What you need: 

2 tablespoons oil
1/2 yellow onion, chopped
2 cloves garlic, minced
2 large sweet potatoes, peeled and chopped bite sized
1/2 to 2 tablespoons Cajun seasoning
1 teaspoon pepper
1 (28 ounce) can black beans, rinsed and drained
1 lime

What you do: 

1. Heat a saute pan over medium heat with oil. Saute onions and garlic for 2 minutes. Add sweet potatoes. Season this mix liberally with the Cajun seasoning and pepper.
2. Let this mix cook for 15 minutes or so until the potatoes are soft. You may want to add a 1/2 cup water and cover pan to speed this process along.
3. When potatoes are soft, add the black beans and the zest of 1 lime. You may also want to add more Cajun seasoning to help further flavor the beans. Cook until the beans are heated through and you think the flavors have melded. Right before serving, squeeze some lime juice over the dish.
Serve over a bed of brown rice or, if you feel like some creative nachos, you can serve this on a bed of whole grain tortilla chips then melt vegan mozzarella or cheddar "cheese" over the top. ( I like Follow Your Heart "cheese" the best.) It melts fabulously.
Source of recipe: Threw this together with things sitting in the cupboard, because I was on the brink of starvation and needed something quick and easy.

SO HOW'D IT GO?

I used Emeril's Bayou Blast for seasoning and 3 cups of cooked black beans instead of canned. The lime zest and juice really made it. It was very easy to make and delicious! The leftovers were great too. I think it will become part of my regular rotation.

I tried this tonight and it was really good.  As someone else suggested I added in some chopped canned tomatoes which was good.  I cut back a little on the lime juice (only about 2 tsps) because I find the taste a little too overpowering.  It was also way too salty but that's my fault; I noticed after the fact that the first ingredient in my Cajun seasoning was salt  :o I think I'll have to find a different seasoning blend for next time or otherwise make my own.

So quick and so delicious. Fortunately I had all the ingredients except for lime. I substituted with lemon juice. My mistake was letting the potatoes get too soft. It didn't take away from the taste at all but it turned mushy. This gave me the idea of it being a great base for burritos!

Besides lemon juice, I garnished it with cilantro and green onions. Additionally I had some baby portabella mushrooms and added that as well. The mushrooms really picked up the flavor of the sweet potatoes. The mushrooms were added at the same time as the sweet potatoes.

This was very quick and easy. Turned out great! Only next time I will use fresh sweet potatoes instead of canned because the canned potatoes turn to mush quickly... Still tasty though  ;)b

This recipe was really good and easy. I also doubled the onions and I added half a can of diced tomatoes. The lime is brilliant because it was so flavorful with the lime juice squeezed on the top that I didn't need to add any salt. I ate it on top of quinoa and it went really well together.

I doubled the onions and garlic and used Spice Hunters Cajun Creole.  Added 2 cans of Rotel mild tomatoes and I think it made all the difference.

This was tasty and quick.  I thought I had cajun seasoning, but I was mistaken. I subbed seasoned salt, cumin, and chili powder.  Good stuff!
