Caesar Dressing & Salad
1 clove garlic, minced
1 tablespoon vegan Worcestershire sauce
3 tablespoons olive oil
1 tablespoon lemon juice
2 tablespoons white vinegar
1 teaspoon ground mustard
salt and pepper, to taste
2 tablespoons vegan parmesan cheese
1/3 cup vegan mayonnaise
1-2 heads romaine lettuce, chopped
1 bunch endive (preferably curly), chopped
handful cherry tomatoes, halved
handful croutons
vegan parmesan, to garnish
1. Combine the garlic, Worcestershire sauce, olive oil, lemon juice, vinegar, mustard, salt and pepper, and parmesan in a medium bowl.
2. Once mixed, add the mayonnaise until smooth. Set aside.
3. In a bowl, mix together the lettuce, endive and tomatoes.
4. Place the lettuce mixture in a serving bowl, top with croutons, then add the dressing. Sprinkle with more vegan parmesan!

SO HOW'D IT GO?
Delicious. I didn't have vegan parm, so I just skipped it. The dressing was very, very tangy, and a little on the thin side for my liking, but I threw in a little bit of Tahina which made it creamier. Next time I'll hunt down the cheese, because there will definitely be a next time.
This is a really good, easy dressing. The vegan parm was a nice touch (though we also added nutritional yeast). Thanks!
