Cabbage & Beans

What you need: 

1 medium onion, chopped
1 1/2 tablespoons oil
1/4 cup water
2 carrots, diced
1/2 cabbage, chopped
salt and pepper, to taste
1 (16 ounce) can dark red kidney beans, drained
1/2 cup tomato sauce

What you do: 

1. Sauté onion in the oil for about 3 minutes. Add carrot and water, and cook over medium heat about 5 minutes.
2. Add cabbage, salt and pepper, and cook for about 15 minutes, or until cabbage is barely tender.
3. Add tomato sauce and drained beans. Cook for about 3 minutes, and serve.'

Today we harvested 10 cabbages from my daughter's garden, so I decided to use one up with this recipe.  It was good!  I doubled the recipe to use a whole head.  Replaced the red kidney beans with 1 can white kindey beans and 1 can butter beans because that's what I had--and added 4 or 5 cloves of minced garlic, juice of 1 lemon, and a splash of cider vinegar.  It was a hit!  Thanks--

this is very good! I did change a little- I used spray to saute the onion instead of oil, and I added about 2 tbsp of agave in the sauce and added some paprika and some minced garlic- this is great with potatos or rice (i've had it with both and it really is good either way)

So I've made this twice in two days, because my family has loved it and ate it up. My mother sent a little in a care package to the older woman up the street (apparently she liked it too!)
I used a little bit more tomato sauce than directed, and also I didn't have any kidney beans so I used great northern instead. :) This will be on my permanent rotation! Thank you.

yum! i followed the recipe as is and it was great, but i think my sauce wasnt great so i'll play around with that next time.

Excellent recipe! It was delicious, simple, quick and easy...it was a hit. It's perfect to take along to a BBQ in my opinion as a nice side dish. I liked the red beans, but I think I'll try it with garbanzo beans next time. This is a perfect recipe when you have a whole head of cabbage that you don't know what to do with!!

I use borlotti beans and have just made leftovers from last night's dinner into a lovely creamy soup for today's lunch - delish

I made this again for the first time in awhile and it was soooooooooooo good!! Used black beans, lots of garlic, covered the cabbage while cooking and only took around 10 mins on medium heat.
