Bran Muffins
1 large mashed banana (or 2 small)
1/4 cup (60 mL) unsweetened applesauce
1/4 cup (60 mL) molasses
1/4 cup (60 mL) brown sugar
1 cup (250 mL) soy milk
1 cup (250 mL) raisins
2 cups (500 mL) raw bran
1 1/4 cups (310 mL) whole wheat pastry flour
1 tablespoon (15 mL) baking powder
1 teaspoon (5 mL) baking soda
1/2 teaspoon (3 mL) salt
1/4 teaspoon (2 mL) cinnamon
Combine banana, applesauce, molasses. brown sugar, soy milk, raisins and bran. Stir and mix well.
In a small bowl sift or at least mix well the remaining ingredients.
Add to wet ingredients. Mix well.
Pour into prepared muffins pan.
Bake at 400º F. for 20 minutes.
These muffins are moist. Be sure not to bake them longer than 20 minutes.

SO HOW'D IT GO?
These were too "molasses-y" for my liking - I'd make them again, but cut the molasses by half.
