Blueberry Pancakes

What you need: 

1 cup whole wheat flour
1 teaspoon Baking powder
1/4 teaspoon Salt
1/4 teaspoon Baking soda
1 tablespoon Sugar if blueberries are unsweetened
1/2 cup soy milk or rice milk
1/2 cup Canned blueberries w/juice

What you do: 

Mix the dry ingredients togther; then mix in the soymilk and the blueberries. If the batter is too thick, mix in more blueberry juice until it is the right consistency. Cook in a nonstick pan until they look edible. They will be very blue!

SO HOW'D IT GO?

These weren't too bad. I halfed the amount of 'milk' following the advise of other people on the forum. Also I used a ton of real blueberries, which is definitely the way. Skip the canned stuff

I wouldn't say these were horrid - but I agree with Ashleec. The 1/2 cup of milk must be a typo. I had to add at least 1 cup of rice milk, maybe more (I kept adding a little at a time until the batter became wet - with only 1/2 cup, the mixture was crumbly!) But having said that, the pancakes came out rather tasty. I used sucanat for the sugar and 1 cup frozen blueberries. I would just make sure you add more liquid because there's no way you can make it work with only 1/2 cup.

maybe since you guys used frozen blueberries and not canned with juice like the recipe calls for you were short on liquid? that could be why.

these were absolutely horrid.  i had to add waaaay more liquid than the recipe called for, otherwise the pancakes would be awfully doughy in the center.  i couldn't win with these at all so i resorted to another recipe.
