Blueberry Crisp

What you need: 

4 cups frozen blueberries
juice from one lemon
3/4 cup of brown sugar
1/2 cup of flour
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
4 tablespoons margarine/butter
3/4 cup oats
3/4 cup granola

What you do: 

Preheat oven to 375.
Put frozen blueberries at the bottom of baking dish. Sprinkle on lemon juice.
Mix all dry ingredients together in bowl. Make sure vegan margarine/butter substitute is cold. Cut up butter into small cubes and use fork to combine with dry mixture. It will be crumbly when combined.
Sprinkle crumbly mixture on top of blueberries and put in oven for 25-30 minutes.
This is AWESOME served with soy ice cream.

SO HOW'D IT GO?

I doubled the cinnamon for this and subbed oats instead of granola.  This reheats really well and is inexpensive if you use frozen blueberries.  I make this several times a week, it's getting me off the desserts at Whole Foods - they are like crack!

This was overall really good for my blueberry craving and was super easy to whip up after dinner but I thought it was WAY too sweet. If I make it again I'll cut the sugar to 1/3 cup or so. ;)

Made this with a blend of fresh strawberries and rhubarb.  it was great!  Also used a blueberry/apple granola from back to nature brand... definitely a good way to use up a plethora of strawberries.  I can't imagine a fruit this wouldn't be good with.

So yummy, I didn't have any oats, so I doubled the granola
I use (Natures Path Hemp Plus)
I used Organic whole wheat flour,and omitted the cinnamon and nutmeg, and served it with (Organic Creamy Vanilla So Delicious).
My whole very non-vegan german family devoured it!!!
I'd love to try it with other fruits like mangos and peaches.
