Black Bean Salad

What you need: 

2 LARGE CANS BLACK BEANS
1 CAN WHITE CORN
4 PLUM TOMATOES
1 MEDIUM RED ONION
1/2 GREEN PEPPER
HANDFUL FRESH CILANTRO OR 1/2 tablespoon DRIED CILANTRO
1/2 tablespoon SALT
1/4 CUP BALSAMIC VINEGAR
1 tablespoon OLIVE OIL
2 CHIPOTLE PEPPERS
1/2 tablespoon MINCED GARLIC

What you do: 

1. DRAIN AND RINSE BLACK BEANS. 2. DRAIN WHITE CORN. 3. DICE RED ONION, GREEN PEPPER, CHIPOTLE PEPPERS, PLUM TOMATOES. 4. CHOP CILANTRO. 5. MIX TOGETHER. ADD SALT, OLIVE OIL, GARLIC AND VINEGAR. 6. CHILL, COVERED AT LEAST 4 HOURS.

SO HOW'D IT GO?

This "southwestern salsa" is one of my go to recipes for pot lucks. It is devour worthy!  I  double the recipe leave the tomatoes out and add the tri color  pre packaged bell peppers from Trader Joes.  Great as a salad too. I always crush a couple of tortillia chips on top.

love love love this...I just made this for a Xmas eve party that I am going to tonight and it is DELICIOUS!!!I actually want to keep it for myself and bring something else to the party :)

This salad is lovely and easy!  I pretty much followed the recipe as written and it turned out great.  It's a good thing to make a day ahead to take to parties or potlucks.

I make something very similar except for the vinegar, olive oil and salt (and I've never used the chipolte peppers and galic, but would be good).

In stead I mixed in a ranch dressing (vegan sour cream mixed with a ranch packet).
I also use it as a dip for chips!
Very nice and refreshing recipe!

LOVED this! So simple and quick to make, pop it in the fridge for a couple hours and it's done. Made it about three days ago for my partner and I and we are STILL eating the leftovers. I will most definitely be making this again and again! :)>>>

This was a very easy dish to throw together in the morning and then let sit until lunch.  I used frozen black beans (cook up batches myself and freeze) and frozen corn....I just let them thaw...no cooking involved.  I did do some subs....used lime juice instead of vinegar, used green onions instead of red, used roasted red pepper instead of green.....but this is one of those recipes that can be altered with no harm!  I like my foods a bit spicey so I added some hot sauce too.  Will make this again for sure.

This was delicious! I added some Tabasco sauce to make it a little spicier. So good!
