Black Bean Burgers

What you need:

1 (20 ounce) can black beans, rinsed and drained
1/4 cup yellow onion, diced
1/4 cup red bell pepper, diced
1/2 teaspoon ground cayenne pepper
1 egg replacer (http://vegweb.com/index.php?topic=7678.0)
1 cup seasoned bread crumbs
2 tablespoons fresh chopped cilantro
2 tablespoons olive oil
salsa, to garnish
alfalfa sprouts, to garnish
guacamole, to garnish

What you do:

1. Preheat oven to 350 degrees F. Grease baking pan. In a large bowl, mash black beans then add onion, bell pepper, cayenne pepper, egg replacer, vegan bread crumbs and cilantro.
2. Blend until all ingredients are mixed well. Form bean mixture into patties and place on prepared pan.
3. Bake for 10 minutes. Alternatively, fry them in olive oil. I recommend baking them. Serve with garnishes, if desired.

SO HOW'D IT GO?

These were yummy with a capital Y!
I made them without the cilantro because I did not have any. Also I used Franks red hot sauce instead of cayenne because I didn't have ground cayenne. My egg substitute was 2Tbsp of Tahini which worked very well, they held together beautifully when forming into patties.
I had to bake them about 6 minutes longer than suggested but they turned out great, not too dry or mushy either.

I also had the Spicy Fries with my burgers using a recipe from this site.

Thanks for the great recipe!

I just made these.. completely ruined them! I made too much egg replacer, because I noticed someone said they used 1/4 cup of flax seed. It was far too much, but I carried on anyway and put a lot of the mix in the fridge. I was left with about 2 tbs egg replacer. I followed everything else as stated, with the exception of pinto beans + own seasoning, rye crumbs and oats for the breadcrumbs and a green pepper. The recipe says blend, however it's not clear whether this means by hand or machinery... I used a food processer because mashing things never worked well for me before. I added flour at the end of processing as it was too moist.
I cooked them nonetheless, ignoring the moisture. Put them on foil (which wasn't oiled - they stuck a lot), couldn't shape them (so wet), just splat them onto the foil and spread slightly with a spoon. I baked them for 40 minutes or so eventually, but they still weren't cooking through. The cooked bits tasted really nice, though the insides were basically refried beans, and bland. I'm sorry if I'm making the recipe sound bad, it's not, it's just my silly mistakes!
I've frozen the leftovers (3 burgers out of 4) and am thinking they might cook more next time they go in the oven. No one should be scared because of this review... it's just me! Just limit the liquid as much as possible. I ate it in pita bread with beansprouts, lettuce, cucumber and ketchup. Not sure that they go with ketchup, I think avocado/guacamole would be excellent though. Mustard and salsa would be good as well.
Anyway, thanks for the recipe! I'll try and make it again (correctly) when I can.. Thanks!

Made these tonight with spicy fries.  Delicious!  Pan cooked until dark brown, served on fluffy bread.  Will spice them up a little more next time, didn't have the courage to do the cayenne this time.  Made 5 patties total, so I have leftovers too!

These were very good. I baked them for 15 minutes then fried them in oil to give them a crispy coating. Then I served them on buns with ketchup and cheese. I'll definately make these again  :)

These turned out a little dry but really tasty.  I only used 1/2 a cup of breadcrumbs because I thought a whole cup would just be too much.  I didn't have seasoned breadcrumbs so I used plain and added some garlic and onion powders and a little oregano.
Things I will try for next time: I think I will put everything in a processor and see how it comes out.  I'm going to cook the onions first because I generally don't like chunks of raw onion which these had.  Oh and I think these will be better grilled so I will try that next time as well.

So I made these with low expectations and...wow. These are really good. I mean upon mixing all the ingrediants I said to myself, these are really holding together well. Then making the patties was so easy and they were just perfect. And as for the taste, I loved it. Mind, they were squishy, but that is to be excpected. But I am thoroughly satisfied. Also, I served these with spicy fries from this website. YUMMY! Making these again soon.

FANTASTIC!!!  I modified a few ingredients to use what I already had in my fridge and pantry (i.e. green bell peppers instead of red, and tore up a piece of vegan bread instead of using bread crumbs).  These burgers turned out great!  Healthier and CHEAPER than buying frozen veggie burgers.  This will become a staple recipe in my house!

I have decided to become a vegitarian very recently after seeing the video about the rave diet and reading the book called the cure. I was a little nervous about the whole thing but this recipe and others like it have made it alot easier.  This was wonderful! Even my kids loved it and I was more nervous about them enjoying it. Thank you very much for sharing this recipe it was great.  ;D

These turned out great. We baked them and then grilled them on our George Foreman grill. Next time, I'd only use a little cilantro -- I think the taste was a little too overpowering. Otherwise, delicious and really nice texture.

sorry to bother you guys but what is an egg substitute...i noticed that on a lot of the recipes

Egg substitute usually refers to a product called Ener-g which you should be able to find at a health food store.
I've also used the following as egg replacers in baking but I'm sure you could try using it for this recipe as well:
Corn starch: 2 TB = 1 egg
Arrowroot flour: 2 TB = 1 egg
Flax seed: 4 TB flax seeds + 1 C water; blend flax seeds & water in a blender for 1 to 2 minutes until mixture is thick and has the consistency of beaten egg white.
