Black Bean Burgers
1 (20 ounce) can black beans, rinsed and drained
1/4 cup yellow onion, diced
1/4 cup red bell pepper, diced
1/2 teaspoon ground cayenne pepper
1 egg replacer (http://vegweb.com/index.php?topic=7678.0)
1 cup seasoned bread crumbs
2 tablespoons fresh chopped cilantro
2 tablespoons olive oil
salsa, to garnish
alfalfa sprouts, to garnish
guacamole, to garnish
1. Preheat oven to 350 degrees F. Grease baking pan. In a large bowl, mash black beans then add onion, bell pepper, cayenne pepper, egg replacer, vegan bread crumbs and cilantro.
2. Blend until all ingredients are mixed well. Form bean mixture into patties and place on prepared pan.
3. Bake for 10 minutes. Alternatively, fry them in olive oil. I recommend baking them. Serve with garnishes, if desired.
SO HOW'D IT GO?
Goodness, what can I say except that I love them. I made them the first time a couple of weeks ago and have been craving them ever since. Have some made up in the fridge now so that I can pop one on the grill any time.
Oh my goodness, this was so good!! My bf and I aren't actually vegan, but he is lactose intolerant and I hate cooking/eating meat. So we LOVE this site, everyone here has great recipes!! This recipe in particular is AWESOME! We used two eggs instead of the substitue just to let ppl know. Great recipe! This is going to be one of our staples!
They were really good, and quick and easy to make! Mine fell apart a little but thats probably bc I didnt get all the beans mashed completely, oh well they were still really yummy!
yummy! I made these with white beans, green peppers, and no onion, and they were really good...I didn't even use a bun, just mustard and hot sauce! :)>>>
I sauteed some onions and mushrooms and covered them with teriyaki and put that on the burger as well guacamole. Mine came out real squishy (maybe they need to bake longer?), but I still loved how they tasted!
I made a similar recipe, which used 2 slices of finely crumbled wheat bread to the mix and cracker crumbs instead of the bread crumbs. Awesome topped with hot peppers and vegan cheese! Leftovers are even better the next day!
OMG!!! These make the best sandwiches ever!!!! I am so glad my burger buns didn't turn out right b/c I don't think it would have tasted right on a bun. I oven toasted some whole wheat bread and spread it with a garlic salt/smart balamce butter mixture. Then after the "burgers" were done I put them on the toast with sliced tomatoe and lettuce. The key is not to expect it to taste like a hamburger. It is more like a mushy sloppy sandwich.
I wasn't a fan of this recipe.. :( It was my first time to try to make burgers, but it didn't work out at all. I pretty much stuck with the directions... used 1 cup homemade whole-wheat bread crumbs and baked them rather than frying.. I didn't need the oil because I was baking.. maybe I was supposed to put it in with the rest of the ingredients? Anyway, they didn't hold together at all after coming out of the oven; crumbled as I took them off the baking sheet. The remaining crumbles were really bland too :( I dono where I went wrong, this sounded really good!
These were really yummy. I cut down the cayenne pepper, added some cumin, sea salt and pepper to spice it up a bit, replaced green peppers with yellow, and didn't mash up the beans all the way (I left some intact). I also did 3/4 cup of whole bread crumbs and 1/4 cup of ground flax seed to make the burgers really nutrilicious with some omega 3's. I baked for 10 minutes and grilled on the foreman grill (as was previously suggested by someone else) and they turned out just the right texture. Great recipe! Thanks so much!!
What I liked about this recipe is that it was very quick and easy to make; surprisingly I had all the ingredients in my cupboard! My only disappointment was that I thought they were a bit bland. Next time I will surely add more salt and spices. Had I eaten this on a bun w/ condiments and vegetables that would have helped, but alone, they are bland.
