Beautiful Banana Bread

What you need: 

nonstick spray
3 bananas
1/2 cup unsweetened applesauce
1/2 cup maple syrup
1/4 cup brown sugar
1 tablespoon ground flax seeds
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1/2 to 1 teaspoon cinnamon
1/2 cup walnuts, chopped, optional

What you do: 

1. Preheat oven to 350 degrees Fahrenheit. Grease a loaf pan. In a large mixing bowl, mash bananas well with a fork or potato masher. Add applesauce, maple syrup, sugar, and flax seeds; mix to combine.
2. In a separate bowl, combine flour, baking soda, salt, and cinnamon; mix thoroughly. (Or you don't have to do this step if you don't feel like it, it works just as well to just dump all the dry ingredients into the wet without mixing first.)
3. Add the dry to the wet and stir until thoroughly incorporated. Add nuts if you're using them. Pour into prepared loaf pan, and bake for 50 to 60 minutes, or until the loaf starts to turn golden brown and the toothpick test is successful.
4. Remove loaf pan from oven and cool on a wire rack for 5 minutes. Transfer loaf to wire rack and let cool completely, or as long as you can wait.
Slice and enjoy.
Source of recipe: I came up with this recipe after mucking around with other banana bread recipes, trying to find one that suited my tastes.

SO HOW'D IT GO?

This banana bread is WONDERFUL!! I admit, it was my first go at any sort of banana bread and I was a bit skeptical but the bread turned out AWESOME. I will make again and again. It was moist, easy to slice, and EASY to make. My better half loooooves it as well. He told me it made his day.  :)>>>

I changed the recipe a bit with what I had on hand. I don't have much of a sugar tooth so I also cut some sugar. I added 1/4 cup agave instead of maple syrup. I added 2 tablespoons ground flax and 1 tablespoon bran. I used whole wheat flour and 3/4 tablespoon baking soda.

I agree about the maple syrup. I didnt add the brown sugar and I still found it a little sweet for my taste. Next time I will only use 1/4 -1/3 cup of maple syrup. The maple syrup does give it a really nice flavor. A good recipe and its fat free, which is a bonus.

What a wonderful recipe!  My non-vegan husband and toddler could not get enough of it :)  The only thing I changed was to use less baking soda and salt (by half) and a little less maple syrup.  Still rose pretty well and was moist and tender.  Thanks so much!
