Banana Zucchini Bread or Muffins

What you need: 

1 cup grated zucchini
1 1/2 over-ripe bananas, mashed
1/2 cup oil
1 cup sugar
1/2 teaspoon vanilla
1 1/2 cups flour
1 teaspoon nutmeg
1/2 tablespoon baking soda
1/2 teaspoon baking powder
1/2 tablespoon cinnamon
1/2 teaspoon salt
3/4 cup chopped walnuts, optional

What you do: 

1. Preheat oven to 350 degrees F. Lightly grease 9" bread pan or 6-muffin pan.
2. Stir zucchini, bananas, oil, sugar, and vanilla together. Mix with hands if necessary to break up banana chunks.
3. Add the remaining ingredients and stir well.
4. Pour batter into prepared bread pan or muffin tin and bake 50-60 minutes for bread, 30 minutes for muffins.

SO HOW'D IT GO?

I sub applesauce and make this with a variety of whole grain flours (spelt, ground quinoa, whole wheat, whatever's around) and it comes out awesome! I have problem not eating the whole pan for breakfast hehe

I made these today but with whole wheat flour and I added 6 tablespoons of dark dutch cocoa. My roommate and I liked this recipe that we ate the whole loaf in under half an hour. This recipe is very moist and tasty - next time I make it I'll be cutting back the sugar because they were plenty tasty and I think the recipe will be able to stand up to it.

This recipe is very easy, and so very delicious!
I made six muffins and they were gone so fast.
Making more today.  :D Yaay!

This bread is absolutely out of this world! It is so delicious, fabulously aromatic, and moist.  Everyone who has tried it loves it. I recommend substituting applesauce for oil and adding extra zucchini.

But seriously, this really was amazing. I made a loaf using all whole wheat flour, about a 1/3 cup extra zucchini, and around 1/4 tsp of nutmeg (since my boyfriend and I aren't really nutmeg fans), everything else was kept the same. After about 30 minutes of baking, the wonderful banana-y cinnamon smell permeated through my whole house! The only thing I'll change next time is the amount of sugar.

OMG! This was so good!! I'm only thirteen and its a little hard to buy fancy egg replacer and flax seed bacause i feel bad since they are expensive.  But this stuff was mostly already in my house!!  Eh! It was so good, it needed more cook time because of my alterations though:
- About a 1/4 cup of honey instead of sugar
- a little less than 1 1/2 cup of whole wheat flour(all i had left)
- 2 mashed bananas
- a little over a cup of zucchini
- at about 10 minutes til it was finished, i chopped some walnut and tossed some honey and a little oatmeal in a bowl, mixed and put it on top, and oh boy it was YUM!!!  Thank you for this easy delicious and moist recipe that withstands tweaking!!  ;D

this was a nice recipe & made my kitchen smell amazing! i was a little short on the zucchini, so i added an extra banana. also subbed in applesauce for the oil, and skimped majorly on the sugar. loved the nutmeg in this! next time i will try in muffin form. :)

Wow! They turned out great and were delicious! I forgot to add, I used probably 2-3 Tablespoons of ground flax seed as well, and I only ended up baking them for about 20 minutes. Perfect!

This recipe made 12 muffins for me. I substituted 1/2 c of applesauce for the oil and used 1/2 c whole wheat flour, 1 c unbleached white all purpose flour. They're in the oven right now... I'll let you know how they turn out!
