Banana Chocolate Chip Cookies

What you need: 

1 1/2 cups flour
1 teaspoon baking powder
Dash salt
1/2 cup vgan margarine
1/2 cup sugar
1 teaspoon vanilla extract
1 very ripe banana
Chocolate chips, as desired

What you do: 

I hate to dirty up dishes so I try and use only one mixing bowl. I suppose you might first mix the flour, baking powder and salt in one bowl, but here's how I make it...
1) Preheat oven to 350 degrees Fahrenheit.
2) Melt the margarine, either in the measuring cup or the mixing bowl. Then add the sugar and vanilla extract. Add the banana- whole- and just mash it up real good with a fork in the bowl.
3) In the same bowl "sprinkle" in the baking powder and salt and just give it a quick stir. Now dump in all the flour and mix well with a fork or using a hand mixer.
4) Fold in chocolate chips. Bake for 10 to 12 minutes. They turn out quite soft so if you like them a bit crunchier bake them for about 13 to 15 minutes.
