Baked Spaghetti

What you need: 

1 pound dry spaghetti or pasta shape of choice
2 to 3 cups vegan "burger" crumbles
4 cups pasta sauce (about 1 jar)
1 bell pepper
1 red onion
1 mushrooms, as desired
olive oil, as needed

What you do: 

1) Preheat oven to 350 degrees Fahrenheit.
2) Cook pasta according to directions on box. I like to stop cooking it once it's pretty al dente, because it will soften a little more when baked.
3) While the pasta is cooking, chop up red onion, pepper, and mushrooms. Put the onion,pepper, and burger crumbles in a frying pan with some oil and cook over medium or medium-high heat until everything is heated thoroughly. If you want the onion and pepper to be more on the soft side, then those should probably go in the pan for a few minutes before the burger crumbles, as the crumbles only need to warm and don't take more than a few minutes.
4) Once everything in the pan is warmed, add pasta sauce and mix together. Reduce heat to low and that mixture can just sit until the pasta is finished. When the pasta is to desired consistency, drain and rinse with cold water.
5) Now, there are two options on how to go about cooking the pasta. If you are feeling sort of lazy, you can just mix together the pasta and sauce mixture and plop it in a casserole dish, being sure to spray with something to make sure it doesn't stick! Otherwise, you can layer the noodles and sauce. Either way, the mushrooms should be added at this point and they will add wonderful flavor as it bakes. I would suggest not putting any mushrooms right on top, however, because they will burn and not taste nice. Place dish in middle of oven and bake for 20 minutes or so. The dish is done when the top looks a little dry. Let it cool for a few minutes and enjoy!
Optional: I am no good with spices so I usually don't fool around with them much, but all kinds of things could be added when frying the crumbles to give delicious flavors. And, I know this is not vegan, but my boyfriend and his family are all meat eaters, so I usually throw a little cheese on their sections to add a familiar flavor for them. I suppose vegan cheese could be used, but I have no experience with any.
