Baked Seitan (Best meaty texture ever!)

What you need: 

2 cups wheat gluten
1 cup nutritional yeast flakes
1 teaspoon cumin
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon smoked paprika
1 ½ teaspoons sage
1 1/2 cups vegetable broth
1/2 cup water
¼ cup ketchup
2 tablespoons soy sauce
2 tablespoons olive oil

What you do: 

1) Preheat oven to 325 degrees Fahrenheit.

2) Mix all the dry ingredients in a bowl with a fork. In a second bowl, combine wet ingredients and mix well.

3) Slowly add the wet mix to the dry mix, stirring to combine into a dough. Turn dough out onto the counter and knead for several minutes.

4) Shape dough into a tube and wrap in aluminum foil. Bake for 90 minutes directly on the oven rack, turning once halfway though baking. Let cool and enjoy!

SO HOW'D IT GO?

Hi...I made this seitan a couple of days ago and it is wonderful.  My question is this...when I put it together it was more like a batter than a dough...is this the way it is supposed to be?  I didn't think it would knead properly like this so I added some chickpea flour, 1T at a time (took about 1/2 cup) until it reached dough consistency and then continued from there...it turned out delicious an looks quite similar to your picture so what do you think?  Thanks so much!

BLOWING MY MIND!!! i didn't put the cumin (didn't have ground) but used all the other ingredients as listed. i baked this in a covered dish instead of wrapping it in foil and i think that made it EVEN BETTER. has a crispy little crust that is just to die for. i put it in a greased loaf pan with a lid. my young son, who is rather choosy and won't eat any 'fake meat' (or real meat!) tasted this and LOVED IT! asked for more!! i recommend it highly but do as i did and skip the foil. bake in a covered dish so it gets the crust!
