Baked Dutch Apple Pancake

What you need: 

1/3 cup maple syrup (I used low calorie pancake syrup)
1/4 cup brown sugar
3 tablespoons vegan margarine
2 apples, thinly sliced (I leave the skin on)
1 Ener G egg replacer
3/4 cup nondairy milk (I use soy)
1/3 cup applesauce
1 tablespoon vegan margarine, melted
1 1/4 cups flour (I used whole wheat pastry flour)
4 tablespoons sugar
2 teaspoons baking powder
1/4 teaspoon salt

What you do: 

1. Preheat oven to 400 degrees F. Combine maple syrup, brown sugar, and margarine in a 9" round baking pan.
2. Put in the oven for about 5 minutes, until the butter melts. Remove and stir to dissolve the sugar. Arrange apple slices, overlapping, over the syrup mixture in the pan. Set aside.
3. Whisk together the egg replacer, milk, applesauce and melted margarine. In a medium bowl, combine flour, sugar, baking powder and salt.
4. Pour in the milk mixture and stir until smooth. Pour batter over the apples. Bake for 20 to 25 minutes. Remove from oven and turn out onto a serving plate.

;)b I totally enjoyed this recipe.  It's made frequent appearances on my table for breakfast and brunch ever since I came across it.  I've prepared the recipes as given and also with a few minor modifications.  For instance, I have made it using pecans instead of apples with great results!  Also, when preparing it using the apples, I add about 1/4 - 1/2 tsp. of Saigon cinnamon to the batter. I tend to use a variety of apples.  For some reason, the thought of using three different varieties when making it appeals to me. Anyway, thanks for sharing such a delicious and easy recipe.


Mmmmmmm....soooooo good!! I omitted the maple syrup altogether, and it made it sweet but not overly so. I also subbed extra applesauce instead of the Ener-G, and used oil instead of melted margarine in the batter. Definitely a winner!


Well, I'm not sure why this didn't cook through all the way.  I used the right temp. for the right amount of time, but it was still  partially uncooked. My kids weren't interested in it, but i think it's because it looked mushy.  BUT, it TASTED GOOD!  I'll definitely try this again.  Hopefully the batter will fluff up like the pictures other people have posted.

I made this again. I signed up to bring snacks to my bible study and thought of this since it's soooo delicious!!  :)

I cut this down to serve one and had it for "lunch" or should i say dessert

1 tbl maple syrup
1 tbl brown sugar
¾ tablespoon vegan margarine
½ apple thinly sliced with the skin on
½ banana
2 tbl vanilla soy milk
A little less than 1/3 cup flour (rye)
¼ teaspoon baking powder
1 ½ tbl applesauce

yummms neway i also didnt have a round pan and used a tiny loaf pan!!


I made this for my boyfriend because I don't usually like really sweet things but it was so good I couldn't get enough... My mom loved it and my boyfriend said it was the best thing he's had since going vegan. I can't wait to make more.  ;D


mmm this was soo good tastes like nothing ive ever had before like someone else said it would be just as good as a pineapple upsidedown cake
