Awesome Chocolate Cookies

What you need: 

3/4 cup margarine
1 cup unrefined sugar
1 egg replacer (http://vegweb.com/index.php?topic=7678.0)
1 teaspoon vanilla
1 1/4 cups whole wheat pastry flour
1/3-1/2 cup cocoa
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon sea salt
1 cup vegan chips (peanut butter are awesome)

What you do: 

1. Preheat oven to 350 degrees F. Mix margarine and vegan sugar until creamy. Add egg replacer and vanilla.
2. In a separate bowl, blend flour, cocoa, soda, and baking powder. Add dry mixture to wet mixture and mix until everything is well blended.
3. Stir in the chips. Form balls and smash them down a little bit on an ungreased cookie sheet. Bake for 7-9 minutes until the tops are no longer gooey.
It's really important to use the purest, most unprocessed, organic ingredients you can find. It makes a huge difference in the way the cookies taste and the way they make you feel. These cookies are truly scrumptious! '

SO HOW'D IT GO?

These came out GREAT. I used vegan white chocolate chips with these and made very small cookies... I used the full amount of cocoa, and they were chocolatey, sweet, but not too much so. They're the best double-chocolate cookies I've made. This one is a keeper!

These cookies rock!!  They were absolutely delicious.  The only thing I will change is that this time I used one whole banana as egg replacer, next time I will try one half.  My dough was a little bit on the wet side...but the cookies were amazing...definitely 5 stars from me.

These are really yummy! The dough is too, which is important. I used dark cocoa powder and regular chocolate chips, although I think peanut butter chips would be even better. I also used regular white flour because I was out of pastry flour. Very good!!!

These are excellent.  Moist, slightly chewy, yummy.  I did change the recipe some.  I used 1/2 cup of margarine, 1/2 reg white sugar, 1/2 sucanat, flaxseed for egg replacer, ran out of vanilla and added 1/4-1/2 teaspoon of mapleine instead, no chocolate chips, but added 1 HEAPING tablespoon of peanut butter.  Turned out wonderful! entire batch was eatten last night. Great how it is, but great recipe to experiment with.
