Apple Pizza

What you need: 

1 red apple
olive oil
minced garlic
1 cucumber
1 vegan pizza crust
1 small red onion
about 2 cups sweet tomato sauce
lemon juice

What you do: 

First sauté the onions in a little bit of olive oil just until tender.
Finely chop the apple and cucumber into very small cubes about 1/4 of a inch.
In a small bowl combine the cooked onions, the apple and cucumber and add just about a cap full of olive oil and enough lemon juice to keep the apples fresh looking. Add just a taste of minced fresh garlic.
On the pizza crust, if desired, brush on a bit of olive oil and then add desired amount of sauce. Add the cucumber/ apple mixture and cook in the oven according to the directions for the pizza crust.

SO HOW'D IT GO?

This was pretty good. I should have added nuts, but I didn't know what kind would be good. I can see where it might be good bite-sized at a party, but eating two big pieces of it was just okay. It was refreshingly different, though, and I think I will make it again.

I made this tonight and added some nuts to the top for a little bit of protein.  It turned out really well!  We'll definitely make it again!

this looks really good! i don't know if i've ever seen any sweet tomato sauce. is it available only in special places?
