Anything Scones
1 1/4 cups flour (you can use whole wheat, and it's just as tasty)
1/2 cup brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 cup nondairy milk (I use soy)
1/2 cup vegetable oil
1 teaspoon vanilla
1 cup oats
1 cup raisins, apples, blueberries, nuts, or chocolate chips, etc.
1. Preheat oven 375 degrees F and grease a round cake pan. Stir together flour, brown sugar, baking powder, baking soda, and cinnamon.
2. Make a well in the center and stir in milk, oil, and vanilla. Mix well and fold in oats. Stir in raisins, apples, etc.
3. Spread batter into prepared pan, and flatten so it looks like a cookie cake. Bake for 18 minutes, then cut into 8 pieces when done.
These are the perfect scone consistency. You can add anything you want to them. Amazing dough! I have made added raisins, apples, blueberries, and chocolate chips. All delicious and people love them!

SO HOW'D IT GO?
Yummy! Came out a bit mooshy even though I baked them for a total of 30 mins. I added a little bit over a cup of mixed walnuts, raisins, and diced apple. I used 1/4 cup applesauce and a bit of cinnamon raisin peanut butter in place of oil. I'll make these again! Hope they're more 'solid' in the morning :0)
I made this recipe twice today. My first batch, I added the baking soda as written. After baking the baking soda flavour was rather strong. I researched another scone recipe, and ran a second test which came out with better flavour. I can not comment on the "sconiness" as I have no idea what a traditional scone tastes like, nor how the texture should be. In researching scones it generally seems to imply they have various variations (that was fun to type :) ).
Here are my substitutions:

1 teaspoon baking soda ----------------- I cut the baking soda back to 1/8 or 1/4 tsp
1/2 a teaspoon of salt
1 teaspoon cinnamon ---------------- I omitted this out of preference
1/2 cup nondairy milk (I use soy) -------------- I just use 1/2 a cup of water typically
1/2 cup vegetable oil
1 teaspoon vanilla --------------------- I omitted this to keep the recipe very basic
1 cup oats
1 cup raisins, apples, blueberries, nuts, or chocolate chips, etc. ------ I threw in a handful of walnut and raisins
I baked just shy of enough time (about 17 minutes left them still gooey in the middle)
This second batch came out much better for my personal tastes...no more baking soda flavour.
Overall this is a fantastic recipe with loads of room for experimentation with add-ins, thank you so much for sharing it.
I made this recipe with apples and put the dough in muffin tins - apple muffins - the were amazing!!! ;)b
