Amazing Rosemary Bread

What you need: 

1 tablespoon yeast
1 tablespoon sugar
1 cup warm water
2 tablespoons vegan margarine, divided
1 teaspoon salt
2 1/2 cups flour, divided
2 tablespoons fresh rosemary, chopped, divided

What you do: 

1. Place yeast, sugar and water in large bowl or food processor and allow mixture to become bubbly. Mix in 1 tablespoon margarine, salt, and 2 cups flour.
2. Add one tablespoon of the fresh chopped rosemary. Knead for about 10 minutes by hand or in food processor about 5 minutes until smooth and elastic. Add more flour if necessary.
3. Oil a bowl, put dough in it and cover with a towel. Let dough rise in a warm place for one hour until doubled. Punch down dough and divide in half. Let dough rest about 5 minutes.
4. Shape the dough into 2 small rounded oval loaves. Sprinkle remaining 1 tablespoon rosemary over the loaves and press lightly into the surface. Let loaves rise again until doubled, about 45 minutes. Grease a baking pan or sheet, and preheat oven to 375 degrees F.
5. Bake for 15 to 20 minutes, until lightly browned. Carefully remove from oven, brush with remaining vegan margarine (and salt if desired).

SO HOW'D IT GO?

Holy Crap this is awesome! ;)b  The only changes I made were to use dried rosemary and to make it into two braids instead of loaves. It turned out beautifully, and between my son and I, we ust finished one of the loaves already. Fantastic! Give it a try  :)>>>

I forgot to say, I also brushed the loaves with a rosemary and garlic infused oil.

This recipe is so forgiving!!  I was in the middle of a half a dozen things when I was putting this together and ended up with a yeasty soup instead of dough.  After going back to the recipe, I realized I doubled the water.  I was about to pitch it, but thin decided to see what would happen.  I added some more oil and salt and then added flour to make a dough.  (I didn't have any more yeast.)  I assumed I would end up with a flat bread, but this rose quite nicely, and I ended up with two huge loves.  Everyone loved it.

I'm glad this can work in a bread machine! I guess this is just my lazy side talking.  ^-^

I made this with regular margarine back when I was just vegetarian.  Since going vegan, I have missed this recipe.  I realized yesterday that one of the stores in my small city finally started stocking vegan margarine.  I can make this again!

I just used olive oil (I usually replace margarine in breads with oil). Since there is water in margarine usually, I use appr. 1 tbs of oil instead of 2 tbs margarine. There is no particular need for using margarine in breads instead of oil, so I always automatically change this in bread recipes.

do u think this can be done in a bread machine? my first try was handmade and turned out bad... any suggestions r welcome!

Most bread recipes will also work in the bread machine, there aren't any big differences at all. With this one you don't even have to change the size of the portion, this is a standard bread-machine size bread. I just put everything into the machine according to the machine's instruction. You would probably use dried active yeast, I used a teaspoonful of that, and it rose great, although I also used one third full-wheat flour.

This bread is AMAZING. Incredibly easy to make and SO tasty! I was worried because it didn't seem to rise too much the first time,so I let it sit for a while for its 2nd rise, and it didn't get that big  but everything turned out excellently. so good!
