5 Minute Chocolate Cake
1/4 cup plus 2 tablespoons flour (I use whole wheat)
1/8 teaspoon baking soda
1 or 2 teaspoons cocoa powder
2 teaspoon sugar
1 tablespoon brown sugar
2 teaspoons oil
Soymilk, as needed
Dash salt (optional)
1 tablespoon mini vegan chocolate chips
1) Mix everything in a ceramic or other microwave safe cereal bowl. Microwave on high for 90 seconds. Carefully remove with a towel because the bowl will be VERY hot. Let cool and top with icing or peanut butter. Enjoy!
For easy mint icing, use a can of vegan vanilla icing and add mint extract to it to taste. I also sometimes add food coloring.
It may not be as decadent as a traditional baked cake, but for a late night craving, it hits the spot just right.
Source of recipe: I've seen versions of this recipe in various places but couldn't find it on here. My friend posted it on her blog and I've modified it a bit.
SO HOW'D IT GO?
Mine didn't rise ;D anyone know why?
Could it have been the amount of soy milk or maybe if I had used using baking powder instead of baking soda...
Just a guess, since I almost never bake with baking soda, but I *think* baking soda needs something like vinegar to make it "bubble".
This does look like an interesting recipe, though!

Yay! This is amazing for 5 minutes. And clearly it's not great for you but it seems like there are an awful lot of worse things you could eat...or maybe that's just what I'm telling myself...om nom nom.
ps: it says soymilk as needed, I used almond milk which of course turned out fine, and I think I used 1/4 cup to a 1/2 cup ish (I should have measured so I could give an amount as a frame of reference for other people but maybe the beauty of this recipe is that if you use a little too much or a little too little it's still a tasty microwave cake).
Its not the best cake in the world but it'll do when you crave something sweet in a pinch. I shared it with the hubby and my 2 year old and we all liked it. I will definitely use this recipe again.
Works well with oat flour instead of regular flour. Comes out a little denser, but works well.
(I have GOT to stop making these... ;)b)
