1/4 cup plus 2 tablespoons flour (I use whole wheat)
1/8 teaspoon baking soda
1 or 2 teaspoons cocoa powder
2 teaspoon sugar
1 tablespoon brown sugar
2 teaspoons oil
Soymilk, as needed
Dash salt (optional)
1 tablespoon mini vegan chocolate chips
1) Mix everything in a ceramic or other microwave safe cereal bowl. Microwave on high for 90 seconds. Carefully remove with a towel because the bowl will be VERY hot. Let cool and top with icing or peanut butter. Enjoy!
For easy mint icing, use a can of vegan vanilla icing and add mint extract to it to taste. I also sometimes add food coloring.
It may not be as decadent as a traditional baked cake, but for a late night craving, it hits the spot just right.
