Southern Dirty Rice
2 cups long grain brown rice
4 cups broth
1 yellow onion, chopped
2 tablespoons olive oil
7 cloves garlic, minced
3 ribs celery, chopped small
4 teaspoons Cajun Spice Mix (I use Spice Hunter because it doesn't have any weird stuff)
1 red pepper, chopped small
1 (4 ounce) can green pepper, diced
1/4 cup fresh parsley, chopped
salt and pepper, to taste
12 ounces vegan ground beef (I use Yves)
1. In a rice cooker, or as instructed on the package, cook rice in broth. While the rice is cooking, saute onion in the oil until it sweats. Add garlic and when fragrant stir in celery, Cajun spice and a splash water.
2. Stir and let simmer for 5 minutes. Stir in red pepper, green pepper, parsley, and salt and pepper. Let simmer for another 5 minutes.
3. Crumble in the vegan ground beef and stir well. It is key that is breaks up into tiny pieces. Allow that mixture to cook on low, stirring often until the rice is done. If it looks like it's getting a little dry, add another splash water.
4. When the rice is done, stir it into the pot with everything else, turn up heat, and cook for at least 5 more minutes to blend all flavors. Adjust seasonings, if needed.
Serve hot with a side of collard greens or fried okra. Y'all, this is really good.
