Aunt Betty's Fried Green Tomatoes

What you need: 

3 or 4 big green tomatoes
1/2 cup white flour
1/4 cup soy milk
egg substitute (1 or 2 eggs worth)
2/3 cup white cornmeal
1/2 cup corn oil
salt and pepper to taste

What you do: 

Wash tomatoes and slice into 1/2-3/4 inch slices. Sprinkle slices with salt and pepper. Set aside.
Place the flour, "egg", soy milk, and corn meal into separate bowls.
Heat corn oil in sauté pan (medium-medium high heat).
Dip tomato slices in
1. soy milk2. flour3. "egg"4. cornmeal
Fry for 4 minutes on each side. Serve!

SO HOW'D IT GO?

I love fried green tomatoes! My mom used to put them on sandwiches with a citrus vinagrette and fresh basil, mmmm :)
