Cinnamon Spice Cookies
1 cup cinnamon flavored cereal (I use Cinnamon Life)
1/2 cup sugar (I use sugar in the raw)
1 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/4 cup vegetable oil
1/2 cup nondairy milk (I use soy)
1 teaspoon vanilla extract
1. Preheat oven to 375 degrees Fahrenheit. Grease 2 cookie sheets. In a large bowl, with a potato-like masher, mash the cinnamon flavored cereal until it resembles crumbs. Mix in the sugar.
2. In a small bowl, combine the flour, baking powder, baking soda, cinnamon and nutmeg. Add and combine this dry ingredient mixture to the cereal and sugar mixture.
3. Add the vegetable oil, milk, and vanilla extract into the rest of the ingredients and mix together until no more flour-powdery-substance is visible.
4. Spoon cookies onto prepared cookie sheets, and roll each cookie into a round ball. Bake for approximately 15 minutes, give or take 1-2 minutes, depending on your oven. Rotate cookie sheets between upper and lower oven racks half-way through baking.
I strongly encourage playing around with this recipe, since it originated from myself experimenting. Try using different types of nondairy milks, oils, use some whole-wheat flour, add raisins, use an addition 1/4 cup of sugar for a sweeter cookie, etc.
Source of recipe: I had about 1 cup cinnamon flavored Life cereal left in my pantry, and decided to experiment with it through baking. My result was a delicious, spicy batch of cookies which would be perfect as an on-the-go breakfast!
SO HOW'D IT GO?
This is the second time I have been the first to review something. These were simple nd easy to do. and the plus was that my son eats life cereal. I no longer buy processed cereals, but he does...with his money. So, when I saw these, I knew I had to make them.
They were delicious, but they had a tendency to be a bit crumbly, but not so much that I would not make them again.And for that matter, if they are too crumbly, then crumble them on top of some vegan ice cream...problem solved!
