Lonnie's Lovely Lickity-Split Taco Salad

What you need: 

2 cups vegan chorizo (I use Soyrizo)
1 medium onion, diced
1 cucumber, peeled and thinly sliced
2 cups cherry tomatoes
2 heads romaine lettuce, cleaned and chopped
Catalina dressing
Tortilla strips

What you do: 

1) Heat a little oil or cooking spray in a nonstick skillet over medium heat. Saute onions until soft and starting to turn a light golden color, about 5 minutes.
2) Add vegan chorizo to the onions and cook until browned, about 5 more minutes.
3) While the onions and vegan chorizo are cooking, peel and slice your cucumber, wash the lettuce and tomatoes, and arrange all three on salad plates.
4)Top the salad with the vegan chorizo mixture. Add catalina dressing & tortilla strips. Enjoy!!
This is one of those great weekday meals you can throw together in minutes even when you don't feel like cooking. My meat-eating sisters ask for me to make this on a regular basis because they love it so much. I hope you will find is as delicious as my family does!
Source of recipe: My co-worker Lonnie made this for a pot-luck at work. He usually makes his with ground beef but was kind enough to veganize it with me in mind. This has been a staple in my house ever since! Thanks again Lonnie!!

SO HOW'D IT GO?

I loooooved this recipe, with a few changes. I couldn't find veg chorizo, so I subbed in some tvp crumbles (not vegan; trying to get there myself still), which worked out very well. Also didn't use Catalina, as I'm not a big fan of it.

The most amazing result of this recipe: my meat-eater fiance absolutely LOVED the crumbles after trying some of mine that were cooked with the onion. He raved about them so much that he cooked the rest of the package for himself. This is a man who doesn't know what a vegetable looks like and prides himself on getting his daily fruit & veggie intake from juice (I've only recently hooked him onto fresh-cooked carrots). Even if it's not fresh veggies, it's a start  ;)b
