The Best Taco Salad Ever Made!

What you need: 

1 cup cooked pinto beans
5 ounces of soft Tofu
2 tablespoons lemon juice
2 teaspoons cumin
2 tablespoons fresh cilantro
1/4 teaspoon black pepper
3 cups chopped lettuce
4 large tomatoes, chopped
1/2 cup soy vegan cheese
1 cup diced cucumber
salsa
1/2 cup chopped black olives (or garlic stuffed green olives YUM!)
1 bag of corn tortilla chips

What you do:

Combine beans, tofu, lemon juice, cumin, cilantro, and pepper in a blender or food processor and process until smooth. Set aside.
Prep vegetables of choice.
Place lettuce, vegetables and cheese in your bowl(s). Spoon bean mixture on top. Add salsa and crunched up chips on top.
Mix altogether and enjoy!!

SO HOW'D IT GO?

No offense howe'ver I think I'll stick to my taco salad.  A pile of bean and tofu goo on a bed of lettuce does not sound very appetizing to me.  :-\
