Vegan Blueberry Pancakes

What you need: 

1 cup all purpose flour (I used organic)
2 teaspoon baking powder (level it off)
3 tablespoon agave nectar
1 ener-g egg replacer
1 cup vanilla soy milk (I used silk)
2 tablespoon unsweetened apple sauce
1/2 tablespoon cinnamon
1 cup blueberries

What you do: 

Heat pan (I used a griddle) to 325 degrees Fahrenheit. Splash a drop of water on it, if it dances around it's ready. Spray a little oil on it.
Mix all the wet ingredients (that includes the 1 teaspoon egg replacer w/ 2 tablespoon warm water) in one bowl, and all of the dry ingredients in another (exlcuding blueberries). Once they're mixed, pour the wet mixture into the dry. With a whisk, stir it all together, just until it's all combined. Using a rubber spatula, GENTLY fold in the blueberries. Using a soup ladle, spoon the batter onto the griddle. Once the top of the pancake starts to bubble (usually about 1 1/2 min), flip it over. Cook for another 1 1/2 minutes. Remove from pan. Top with syrup, vegan butter, and extra blueberries :)
Source of recipe: I needed to feed my 8 yr old son :) I started off using a recipe I found on here (Best pancakes vegan or otherwise, she was right btw lol). I just tweaked it a little, leaving out the salt and oil, and changing a few ingredients.

SO HOW'D IT GO?

I had super high hopes for these, but they turned out terribly for me; they didn't hold together at all, even after the bottoms started to burn I couldn't get them to flip without falling apart. I followed the recipe exactly, so I have no idea what went wrong. I've never had this problem before, with vegan or non vegan pancakes.

FANTASTIC. i never thought vegan pancakes could be so fluffy yet thick... and flavorful!!!! i added raspberries AND blueberries, and substitued 4Tbsp brown sugar for agave nectar, and banana for applesauce. the cinnamon took them to a whole new level! and they looked so delicious when they've got swirls of red and blue.. wow.

These were delicious.  I used applesauce as the egg replacer and added about a 1/4 cup more flour since they seemed kind of runny.

Just made these and they were great! I used homemade pear butter instead of unsweetend applesauce as I didn't have any on hand - and the pancakes turned out great, not too sweet at all.

These were the BEST vegan pancakes ever!!  Instead of leveling off the baking powder, I used a rounded measurement and it made the pancakes even fluffier.  These are better than any non vegan pancake I have ever had.  Highly recommended!!
