Zucchini Bread
What you need:
2 cups zucchini, grated
2 cups sugar
3 egg replacers (http://vegweb.com/index.php?topic=7678.0)
1 cup vegetable oil
3 teaspoons vanilla
3 cups flour
1 teaspoon salt
1 teaspoon baking powder
3 teaspoons cinnamon
What you do:
1. Preheat oven to 325 degrees Fahrenheit. Mix the zucchini with the sugar, egg replacer, vegetable oil, and vanilla.
2. Add the rest of the ingredients and mix well. Grease 2 (9x5x3") pans with cooking spray and put 1/2 the mixture in each pan.
3. Bake for approximately 1 hour or until a toothpick inserted in the bread comes out clean.
The bread freezes very well if you want to save some for later. It's delicious!

Disappointed :( This didn't rise at all. And the 1 hour cook time was way too long, because when I took it out it had a crispy layer around the whole thing. I use a oven thermometer and cooked at a true 350 (my oven is off by about 25 degrees)...I wonder if the recipe creator was using an oven that was off....
The inside part did taste good, but this recipe definitely needs some tweaking.
Ok..so it's in the oven..but so far...doesn't seem to be rising up much..crossing fingers this works out.....
This was really good! I had to make a few subs-I only had about 3TBS ground flax on hand, so I used 2 TBS tapioca flour. I also subbed 2 c wheat flour and did the half applesauce/half oil. The only downfall (which was totally my fault) I didn't grease one of my pans very well, so some stuck to the bottom :( I will definitely do this one again!
This is a great recipe! I halved the it to make a dozen muffins. I used flax seed for the egg replacer, and instead of all the oil, I used 1/2 oil and 1/2 pumpkin puree. I threw in some raisins and chopped pecans and baked for about 35 minutes. They were so moist and delicious! Thanks for sharing!

I'd like to try this recipe, sounds delish. When using e-nergy egg replacer, should I add the water or just use power form?
The water + the powder for 3 eggs worth (mix it together with a fork)... the amount you need should say on the side of the package

Hmmm. Are sure it isn't supposed to be baking soda? Mine turned out very flat and dense and didn't rise at all. :-\
It turned out pretty good. It's a little on the sweet side for me. Next time I think I can reduce the sugar and also add walnuts. I also added 1 tsp clove powder I am thinking the same recipe can also work well with carrots!
Just made this recipe. It's in the oven right now. It sure smells good. I am going to try the suggested replacement of the oil with applesauce next time. Healthier and less calories, I bet. I can't wait to try it. :)
