Zucchini Bread

What you need: 

2 cups zucchini, grated
2 cups sugar
3 egg replacers (http://vegweb.com/index.php?topic=7678.0)
1 cup vegetable oil
3 teaspoons vanilla
3 cups flour
1 teaspoon salt
1 teaspoon baking powder
3 teaspoons cinnamon

What you do: 

1. Preheat oven to 325 degrees Fahrenheit. Mix the zucchini with the sugar, egg replacer, vegetable oil, and vanilla.
2. Add the rest of the ingredients and mix well. Grease 2 (9x5x3") pans with cooking spray and put 1/2 the mixture in each pan.
3. Bake for approximately 1 hour or until a toothpick inserted in the bread comes out clean.
The bread freezes very well if you want to save some for later. It's delicious!

SO HOW'D IT GO?

This bread is delicious and my house smells AMAZING!
I also, like so many others, altered the recipe based on the things that I already had in the pantry. My alterations included whole wheat flour, 1/2 cup of soy milk as a replacement for the oil and 1 cup of zucchini and 1 cup of cucumber. I also love adding warm spices to my baked goods, so I added a dash of clove and nutmeg.

This bread turned out awesome!!  I added pecans and raisins because I had them laying around.  I will def make this again.  Next time I might try using wheat flour and substituting half the oil for applesauce to make it a little healthier.  Otherwise, great recipe!!!! :)>>>

I wanted to add that the bread turned out great.  I added a lemon glaze with lemon rind, about 1 1/2 tbs of lemon juice and 1 tbs of sugar.  I'm taking the second loaf to work tomorrow.

I have my loaves in the oven now.  I added a little whole wheat flour because I ran out of white flour.  I used half oil and half applesauce.  It smells great!

This was SO GOOD!!!!!  We used applesauce as the egg replacer.  Then a made a wonderful glaze to go over the top which made it really gooey.  The glaze was 2 tbsp of melted veg margarine, 1/4 c o.j., 1/4 white sugar and 1 tsp of vanilla.  When the bread is completely cooled, poke holes in the top with a fork and pour on the glaze.  The kids really loved it too, but it's obviously not healthy this way!  Very yummy though. :)>>>

I made this this afternoon and MAN it was good! One of the best recipes I've ever tasted for zucchini bread. I used a flaxseed egg replacer and it was very yummy. I think next time I'll replace the all the oil with applesauce though to make it healthier. It also came out a little undercoked so I'll play with the time ans temperature. Soooooo gooooooood.

I have some in the oven right now, just stuck it in.  The batter was sure tasty.  Will update when it comes out.
