Red Bell Pepper and Olive Delight Sandwich

What you need: 

1/4 medium-large red bell pepper
4 black olives
vegan mayo (I make my own with silken tofu)
vegan Dijon mustard
1/2 teaspoon balsamic salad dressing (I use Newman's Lite)
sprinkle of Cajun seasoning
sprinkle of garlic powder
2 slices vegan bread (sprouted it GOOD)
alfalfa sprouts

What you do: 

Toast the bread slices.
While they are getting crispy, slice up the red pepper into slices sized to your eating preference.
Spread vegan mayo and Dijon mustard on both slices of bread. (A little Dijon goes a long way.)
Lay the red peppers on one slice.
Sprinkle the Cajun seasoning and the garlic powder over the slices.
Rip up the olives into little pieces and layer those on top of the red pepper.
Last, dribble the balsamic dressing over the veggies, top with the sprouts (or other greens), close the sandwich and devour.

Yummy!  I used green olives and added kale.
