Chocolate Chip Shortbread Cookies

What you need: 

1 cup vegan margarine, cold
3/4 cup powdered sugar
1 1/2 cups all-purpose flour
1/2 cup cornstarch
1 cup vegan chocolate chips
1 teaspoon vanilla extract (or almond)

What you do: 

1. Preheat oven to 330 degrees F. With an electric beater, mix together the cold margarine and the powdered sugar.
2. Sift together the flour and the corn starch and mix in gradually to the butter mixture. Add the chocolate chips and extract.
3. Shape dough into little balls and place on a non-greased cookie sheet. Bake for about 20 minutes.'

This recipe was awesome! I was a little unsure about the 20 minute cooking time, so I did 18, just cuz my oven seems to cook fast, but it was perfect! I also melted the chips with mint and dipped half of them, I found this made it easier to fool all my friends into thinking they were real shortbread and then laughing at them when they found out they were vegan.

Really good :) I used extra virgin coconut oil in place of the vegan margerine and instead of putting the chocolate chips in the shortbread, I melted them over a double broiler with some peppermint and coconut oil and dipped the cookies in them. All my family complemented me on such lovely shortbread, thanks for the recipe  ;)b
