Banana Pancakes
What you need:
1 cup flour
2 teaspoons baking powder
1 ripe banana, mashed
1 1/4 cups nondairy milk, divided (I use vanilla or regular soy)
1/2 teaspoon cinnamon
fruit or maple syrup, to serve
What you do:
1. Sift together baking powder and flour. In a separate bowl, mix the mashed banana with 1/2 cup milk until there are no lumps.
2. Add to baking powder and flour and add remaining milk and cinnamon. Stir together until just mixed.
3. Cook pancakes in a lightly oiled frying pan until golden brown on each side.
4. Garnish with fruit and/or maple syrup. Enjoy!

delicious! we left the bananas chunky and spread our homemade apple butter, blackberry preserves. YUM! we also curdled our soymilk with apple cider vinegar to make it more like a fluffy buttermilk.
I make strawberry syrup to serve over these and my fiancée and I refer to it as heaven on a plate. Amazing recipe!
These are way too yummy... and no added sugar! :) I added a touch of vanilla, and have had them with blueberries and plain with pure maple syrup and earth balance. Next up - with PB and J! Thanks for this yummy simple recipe.
