Faux Cheese Sauce
What you need:
1/2 cup water
2 tablespoons oat flour
2 tablespoons nutritional yeast
1 tablespoon mustard powder
1/2 teaspoon turmeric
2 tablespoons margarine
1/2 teaspoon garlic salt
1/2 cup soy milk
1 tablespoon tahini
What you do:
1. Put flour, tahini and water in a jar. Cover, and shake vigorously until the tahini is dissolved.
2. Put the mixture in a small saucepan and heat on medium.
3. Stir in the remaining ingredients until mixture begins to bubble.
4. Turn heat to low and continue stirring until sauce thickens

By the way, I like to: (1) Mix the tahini with the water in jar as the recipe says, but set it aside (ie I don't pour it into the pot and heat on medium). (2) Then I melt the margarine in a pot and add the flour to the margarine. (3) Slowly add the tahini & water mix, mixing as I add so the lumps dissolve. (4) Add the spices and nutritional yeast along the way (5) Slowly add the soy milk the same way the tahini & water mix was added.
I do it all at medium heat until it bubbles, as the recipe says, and then low to thicken.
So far, I've used white flour (it wasn't even unbleached; my Grand-Mother gave me a big honkin' bag of it--might have been a 'sale'--how could I refuse?), but I want to try other flours, eg oat, whole wheat, chick pea flour...
It's such an awesome recipe. I like to double it. It keeps well in the fridge if you have extra; I've usually finished it by the time a week is done, but it probably keeps much longer.
It's great in dinner dishes with beans... My favourite is spread on pita or naan and then toasted in the oven: divine! Great as a side with a bean dish. Enjoy:)
