Fluffy perfect vegan pancakes

What you need: 

1 Cup whole wheat flour

1 Tablespoon baking powder

1 half teaspoon sea salt

2 teaspoon cane sugar (or sweetener of your choice)

1 Cup soy milk

1 Tablespoon lemon juice

1-2 tablespoons maple syrup (optional)

1/2 teaspoon vanilla (optional)

vegetable oil for pan

 
What you do: 

Mix together dry ingredients in a bowl

mix milk and lemon juice separately (makes a buttermilk, yummy!)

heat oil in pan 

mix milk mixture (with vanilla if you choose) into dry ingredients until just mixed. Not too much!

drop 1/2 cup of batter in hot pan

flip when they fluff up and you see bubbles

enjoy!
