Polenta Bake

What you need: 

1 tube of pre made polenta (any flavor, you pick!!!)
1/2 jar of pasta sauce (see above…I used a mushroom/basil sauce)
1/2 jar of pasta sauce (see above…I used a mushroom/basil sauce)
2 cups of chickpeas, cooked
1 jar of Italian roasted red peppers

What you do: 

Cut polenta into ½” slices and place a single layer on the bottom of a glass baking dish.
Add chickpeas and pour the sauce over the top.
Cut peppers into small pieces and place on top of sauce. Discard the oil the peppers are packed in. If there are cloves of garlic in the jar, cut them up and place in sauce.
If you have extra polenta, cut into ¼ pieces and create a sunburst design on top! Looks cute and will brown.
Pre-heat oven. Bake for 45 minutes uncovered at 450 degrees. Let cool for about 10 minutes after removing from the oven.
Delicious! Even the meat eaters will enjoy this one!
