Pesto Quinoa
What you need:
1 cup quinoa (rinsed and drained)
2 cups water
2 cups fresh sweet basil
1/2 cup olive oil
1/2 cup nuts & berries (I used a pistachio, almond, sweet cherry mix from Trader Joe's)
1/2 cup diced cherry tomatoes
What you do:
1. Put quinoa and water into pan, bring to boil. Reduce heat to simmer and cover until water absorbed.
2. While quinoa is doing it's thing, prepare pesto by combining basil, oil, nuts, and berries in a food processor or spice grinder - blend until mostly smooth.
3. After all water absorbed, mix pesto into quinoa.
4. Dice up the tomatoes and mix them in, and then you eat!

I wanted to make this recipe until I read how many fat grams are in each serving!
I just analyzed this recipe (I'm a dietitian):
Per Serving (if you split into 4 servings):
487 calories
35 grams fat
33 grams protein
18 grams fiber
So, maybe split it into 8 servings. ;)
