Flax Egg Replacer

What you need: 

1 tablespoon spoon golden flax seeds
3 tablespoons spoon water
Vita Mix mixer

What you do: 

You've seen the flax/water mixture before no doubt. But, what I have found is placing them in the Vita Mix and running it on high makes it extra gooey like an egg. I have found this greatly improves the binding quality.
The reason I mention the Vita Mix is because of its very powerful motor. You may try it on a regular blender but I don’t' think you'll get the same consistency. You may have to add extra water as this method really emulsifies the oil in the flax seeds.

SO HOW'D IT GO?

I use 1 tbsp GROUND flax seeds to 3 tbsp hot water. I let it sit for about 5 minutes, stirring occasionally, until it looks egg-y enough for me. It works great, and is much easier than having to grind the seeds yourself.

I use this combination all the time, except I use ground flax seed.  That way I can just whip it with a small whisk or fork. It's fast and easy...and I can lick the bowl afterwards, something I couldn't do when I used eggs.  :) 

Also, you could try grinding the flax down first. Then you add the water (warm water) to it and let it sit for 5-8 minutes. This makes the flax very egg-gooey.
Not only that, flax is goooood for you!  ;)
