Rice Flour Flat Bread (Akki Hittina Roti from Karnataka, India)

What you need: 

fine non-glutinous rice flour 4 cups
grated coconut 1/2 cup
finely cut green chillies(optional)
finely cut capsicum 1 cup (or carrot or cabbage)
peas 1/4 cup
oil 1 table spoon
salt 2 tea spoons

What you do: 

Mix rice, salt and oil to a batter like for vegan bread. Add other ingredients. Prepare 4 round balls. Grease a non-stick pan or fry pan and place one ball. Lightly hand press batter on pan to cover the full surface to a few mins lightly roast on gas or electric stove covering the batter adding 1 table spoon of oil. Repeat other 3 balls. Serve.

SO HOW'D IT GO?

This was good.  I didn't have bell peppers or peas but had some frozen corn and added it.  The pancakes are great hot off the griddle.  Wish I'd had some green coriander chutney to go with it!
