Cheesy Macaroni and Cheese

What you need: 

2 cup soy milk
4 oz. pimentos ( 1 jar)
1 1/2 teaspoon salt
1/2 teaspoon onion powder
3 heaping tablespoon yeast flakes
1/4 teaspoon garlic
2 tablespoon cornstarch ( level)
1/4 cup raw cashews
1 tablespoon lemon juice
1 16 oz. bag of egg free macaroni noodles

What you do: 

Blend cashews and pimento in soymilk (blender) until smooth. Add rest of ingredients. Cook in heavy sauce pan until thick stirring constantly. Medium heat. While preparing cheese sauce, cook 1 16 oz. bag of egg free macaroni noodles. Drain noodles and pour cheese sauce over noodles, mix well and serve. Melty Cheese makes good nachos with a can of drained rotelle of your choice. Experiment with cheese sauce and share with us.

SO HOW'D IT GO?

Yummy! I've used grounded chia and flaxseeds instead of cornstach to get even more nutriments. Didn't put ''pimentos'' because I didn't have any... With full of vegetables, it was GREAT!!!

The cheese sauce is the exact same recipe as Melty Cheese I have used it for nachos and mac and cheese too... This cheese sauce is the bomb!!!

it's the same author, so at least he stole it from himself! :)
I make that cheeze too. I love it! Not sure I'd like it on Mac though.

Alex, your photo made me want this now, and it's way too late to eat (smile). I might have to try this... What does it mean by 'pimentos' though?

I see someone responded to this already but I wanted to let you know that roasted red peppers/pickled red peppers are pretty much the same thing.  For a lighter approach, you can try fresh red peppers broiled for 10 minutes in the oven.  Then peel them and slice them.  Use them in place of the pimentos and it will be sweet, but not as strong. 

This recipe is really fun to mess with.  Right now I'm using it as chip dip, and putting it in the fridge to use as a sandwich spread for grilled "cheese" (It thickens!!).  ;)b

So glad I found this sight...  A veg homemaker's dream!!!  :)>>>

Anyone have other ideas on how this awesome "cheese" sauce can be used??  How long do you think this will keep for in the fridge?

Pimentos are red and they come in small jars. I find them near the pickles and olives. Pimentos are the red things stuffed in green olives.

I am so happy I came across this recipe!!  It's even BETTER than the mac n cheese of my youth...  And now my kids get to enjoy it.  My oldest tried it and loved it.  I am giving it to them now for a "late" lunch.  The pimentos taste awesome, and it's so creamy and flavorful.

I had to modify a few things because I didn't have the right ingredients on hand, but was too excited not to try this out.  I used walnuts instead of cashews, and rice milk instead of soy milk.  It still came out wonderful, though i will try it the original way as soon as I go food shopping.

Try this!!  You won't regret it!!  :)>>>

I just thought I'd add that this is probaby one of my daughter's favorite meals.  She begs for it and is always telling me to make sure to put pimentos on my grocery list as well as reminding me to get them at the store.  (That's gets some really strange looks.  Lol.)  I always ad a full pound of frozen veggies and could probably get away with more.  Try it!

My boyfriend (whose family’s cookbook dates back to the Oregon trial) said that this was the best Macaroni and Cheese that he has ever had! After eating this he is now willing to try more vegan food even tofu (something he told me he would never eat!). Thank you L8erthanUthink for posting this!!  :)>>>
