Annas Amazing Vegan Chocolate Oatmeal Cookies

What you need: 

1 cup vegan butter, room temperature
3/4 cup sugar
3/4 cup brown sugar
1 1/2 teaspoons vanilla
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1-2 teaspoons cinnamon
1/2 cup oats
1 cup pecans
1 1/2 cups vegan chocolate chips (Tropical Source works great!)

What you do: 

1. Preheat oven to 365 degrees F. Lightly grease cookie sheets. Beat vegan butter, vegan sugars, and vanilla until nice and creamy.
2. Mix flour, baking soda, salt, cinnamon and oats in a separate bowl. Slowly add to butter mixture. If mixture is too dry, add some nondairy milk.
3. Stir in the pecans and chocolate chips. Spoon onto prepared sheets, keeping each cookie about 3" apart.
4. Bake for 7-12 minutes, or until lightly golden. Let cool on sheets for 2 minutes, then transfer to cooling rack or counter top. Enjoy!

SO HOW'D IT GO?

These were quite good.  Maybe there was a bit too much baking soda-I'm going to try 3/4 tsp next time.  I think they need more oats but I didn't use any nuts or replace them so maybe that threw things off.  Cinnamon and chocolate is a great combo!  These were still reasonably soft the next day - another plus!

These are wonderful! I do not add the nuts, add a little more oatmeal, and I add slightly less cinnamon. I also add in some almond milk to moisten
the mixture. They are so good I can barely stop myself! I have won over every person who has doubted vegan food being any good with these cookies!

These are really nice...followed the recipe exactly, though used a mix of walnuts, pecans and macadamias instead of just pecans.  Added a couple of tablespoons of soy milk as well to moisten the batter a bit.

Very delicious and a hit at a gathering I went to! I changed them a tad bit. Here are my changes:
I did less sugar, more oatmeal, and added almond milk. Here are the amounts I did:
1/2 cup raw sugar
1/2 cup brown sugar
1 cup oatmeal
1/3 cup almond milk
Everything else was the same as the recipe! So tasty and already gone! Thanks for sharing!!

This was such a yummy recipe! Thanks for posting!!

I made a few amendments and they turned out SO tasty!

I used:

1/2 cup of each sugar
1/2 tsp of almond extract
4 tbsps of organic cocoa powder (I didn't have any chocolate...sad day!)
1 cup of oatmeal
1/4 cup of almond milk to smooth out the batter

and followed the rest of the recipe! I will make these again, I think I'm in love...  :)>>>

;)b Them was the chronic! Had no chocolate chips so we used an orange chocolate bar (chopped) and some mint truffle kisses!! And they were great! Did need to add 2 or 3 Tbsps of soymilk...  Thanks Anna! 8-)

Yum Yum and Yum!

I baked them for 7 min because i enjoy the extra soft/chewy cookies and then I replaced the chips for raisins.

Later I ended up making a vegan oatmeal raisin chipwich (or raisinwich in this case) with soy ice cream.

I made these last night and they're delicious! ;D  (Even my picky little brother liked them and he's been loathe to try anything I make since I became vegan.) There was a nice big pile of them on a plate on the counter when I went to bed last night, but when I got up this morning most of them were gone  :o (Guess everyone liked them...) Thanks so much!
