What you need: 

1 (15 ounce) can chickpeas
1 green pepper or celery, diced
1/2 onion, diced
1/2 cup vegan mayonnaise or ranch dressing (I use Nayonaise)
salt and pepper, to taste

What you do: 

1. Pour the chickpeas in a medium bowl, and mash with a potato masher until chunky.
2. Toss in green pepper, onion, dressing and seasoning and stir.
3. You can serve it by itself, in a wrap, or on a sandwich with a big fat slice of tomato.
Delicious! I have served this to plenty of meat eaters and they love it!

This is a favorite staple recipe for me now. I make it slightly different though. I add 1/2 teaspoon garlic powder, slightly less onions, and less vegan mayo. I also add 2 Teaspoons of Relish.

Just remember, you really can't go wrong with this recipe if you start with the garbanzo beans, and the mayo, and add and taste as you go.

Besides making a sandwich, it's great served on small crackers, toasted in the oven for a few minutes, and served as Hors d'œuvres.

I adapted this to be more like my family's traditional "chicken" salad recipe by adding halved red grapes and about 1/4 cup chopped walnuts.  Served it on multigrain bread with a little bib lettuce and sprouts.  SO GOOD!  I will be eating this all summer!

I also add some relish and finely chopped banana peppers to it, to add just a bit of zing.  I also agree with other posters that it's more like Tuna salad.. at least the way I remember it, as it's been 6 years.

YUM-O! I've been on a sandwich kick lately, I've tried a few different recipes from this site. This one was my favorite so far. I used 2 stalks of celery and for the mayo used about 1/4 cup vegenaise and a squirt of ranch. I loved the crunch from the onion and celery. Delish!
