Whole Wheat Carob Brownies
2-3 big handfuls carob chips
Ener-G Egg Replacer equal 2 eggs
1/2 cup whole wheat flour (I used whole wheat bread flour)
1 stick (8 TBSP) soy margarine + some for the pan
1 teaspoon vanilla
1 cup sucanat
Preheat oven to 350. Grease a brownie pan (8) with some margarine.
Melt the carob chips and the soy margarine together over low heat, stirring constantly until smooth. Stir in the sucanat. Pour this into a bowl and add the vanilla and stir in the flour. Pour into the pan and bake for 20 minutes. Lick the bowl while you wait. You won't even miss the chocolate.
Nutritional Info: These can't be to bad for you. Infact, they might even be considered healthy. Make 2 batches!
