Walnut Maple Cookies

What you need: 

2 1/2 cups walnuts, ground in food processor or blender
2/3 cup whole wheat flour
1 teaspoon salt
1/3 cup flaxseed meal
1/3 cup vegan carob or chocolate chips
2/3 cup maple syrup
3 teaspoons vanilla
3 tablespoons sesame seeds, optional

What you do: 

1. Preheat oven to 350 degrees, and grease 1 cookie sheet.
2. In order, mix together ingredients well.
3. Drop dough on cookie sheet with spoon and flatten with fork.
4. Bake 10 to 15 minutes. Check often for burning. Let cool before removing from cookie sheet.

SO HOW'D IT GO?

I LOVE THESE COOKIES! Seriously, these may be my favorite cookies ever, and I have made and tasted a lot of cookies. Mine took the full 15 minutes, but my oven is wonky. My husband said they were perfect as is and I totally agree. Thank you for this recipe :)>>>

This recipe is killer.  It is so natural and so perfectly salty and sweet....I am in love, needless to say!

this recipe is really good. not to sweet, either. i baked one batch at 9 minutes, one at 10. i think the 10 minutes worked very well.

these cookies are fantastic. i used pecans instead of walnuts. i ground them with a nut mill and ended up adding a few splashes of milk because i was afraid it was too dry.  they don't seem like traditional cookies, in terms of texture, ... mine seemed a bit granola bar-ish... but the maple and pecan flavors are mmmm they are good.

i followed the recipe exactly except i subbed pecans for walnuts. still amazing. ALL my friends loved them so i made them again with some vegan chocolate powder. fantastic yet again.

This recipe was good.  I cut down on the walnuts and increased the flour.  I was hoping for more "maple" flavor, but I suppose the flour cut some flavor.  My first batch (I bake in a convection toaster oven) was in for 10 minutes, and the second batch turned out much better at only 8 minutes.  So, don't over bake.  These cookies don't spread while baking, so don't worry about getting them too close on the baking sheet.  I have a picture of them to the right of the recipe.  The embroidered cloth was done by my 91 year old mother-in-law.  And, yes, that is soy milk.  Milk and cookies...yummy!!

Man, I'm going to try these.  Omega-3 is supposed to help depression.  Just reading this recipe lifted my spirits!
