Tofu Salad

What you need: 

1 lb tofu
1 to 2 garlic cloves (to taste)
1 carrot
1/2 celery stalk
1/2 small onion
1 tablespoon dijon mustard
1/4 cup vegan mayonnaise (I use Presidents Choice)
pepper (to taste)

What you do: 

1) Blend all ingredients in food processor. For extra firm tofu, use more vegan mayonnaise.

oh ya i also added cumin which was suggested in another tofu salad recipe and topped it off with paprika :)

I didn't measure anything and it turned out great... I used yellow mustard instead of dijon, added some red onion to the mix, and added garlic powder instead of cloves... I would say this makes like at least 10 sandwiches though which r delish!

Nice and simple recipe. I used a Peruvian yellow hot pepper sauce in place of the Dijon mustard.
