Sugar-Free Banana Cream:

What you need: 

2 12.3 ounce packages septic silken tofu (mori-nu extra-firm is really good)

3 bananas (I used little 6-inch ones)

 

What you do: 

1. Drain tofu and discard excess water.  

2. Blend in food processor with bananas until very smooth.  

3. Transfer to a container or bowl and put in fridge to chill. 

4. Stir right before serving as the banana will have given the cream a bit of brown on top.  This does not affect the flavor.

Makes at least 2 cups (plan to have extra)
