Seitan Fajitas

What you need: 

1 medium onion, sliced
1 green, red or golden pepper, thinly sliced
oil, as needed
1/2 pound seitan
1/2 teaspoon cumin
1/4 to 1/2 teaspoon chili powder
tortillas, to serve

What you do: 

1. Saute onions and peppers in a little oil until tender.
2. Add in the seitan, cumin and chili powder, and cook until seitan is hot.
3. Fold into a hot tortilla. Serve with rice and beans.

This was SO good and so easy!!!  I added additional chili powder, additional cumin, a little pepper and a little salt after trying my first one (just sprinkled each over the mixture and retossed) and it is sooo good. I added vegan sour cream to garnish.

This was really good and easy. I would suggest however to fry the seitan separately so it will turn more crispy.

Yum!! I made these last night for dinner and they were wonderful! It was super easy to make and my meat-eating family loved them!  I WILL be making this recipe again  ;)

mmmm.. good stuff.. i made this into a fajita bowl, due to my lack of tortillas, but abundance of tortilla chips.. the only thing i added was the juice of 1/2 a lime to perk things up a bit, and a little salt cuz i had pure chili powder instead of the salty chili powder spice blend.. yum!
