Vegetable Fajitas

What you need: 

1 cup rice
1-2 tablespoons sesame oil
1 medium onion, chopped
1 small bell pepper, chopped
2 carrots, peeled and julienned
1 cup cauliflower, chopped
1 teaspoon parsley
1 teaspoon oregano
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1 cup broccoli, chopped
1 small zucchini
6 large tortillas
salsa, to taste

What you do: 

1. Cook rice according to package directions. In a wok, heat sesame oil. Cook onions and peppers until they start getting soft.
2. Add carrots and cauliflower. Sprinkle spices over top of vegetables. Stir with spatula. After 1 minute, add broccoli, zucchini, and 2 tablespoons water.
3. Cover wok so broccoli and zucchini will steam for 3 minutes. Remove lid and stir in order to get spices evenly distributed. Cover for another minute or so.
4. Put serving spoonful of rice and vegetables into tortilla. Add salsa, to taste.

SO HOW'D IT GO?

OMG!  These are SO good! 

I threw a few splashes of soy sauce on the veggies before I put them in the skillet, used Italian seasoning instead of the parsley and oregano, used red pepper flakes, black pepper and some seasoning salt instead of the cayenne, and I cooked it for probably about 7 - 10 minutes (wasn't watching the clock) instead of the minute or so like the recipe says.  My veggies weren't done enough for me at that point. 

I will  definitely be making these again!  Thank you!

I changed the recipe just a touch, as I didn't have tortillas, so I just served with tomato rice, and added black pepper instead of cayenne (I was out...).Super fast and yummy, very flavourful!

This was good :) I probably doubled the spices though and used refried beans in place of the rice... good way to use up leftover or even frozen veggies :)
